Is there a way how to populate a combobox automatically with multiple values, which would be based on a selection of multiple users in a people picker field?
I have the following setup:
Project Team Members is a SharePoint Person or Group field
Team is SharePoint Choice field
When user selects the Project Team Members (it can be one or multiple users), the Team should be automatically propagated with Team choices based on another list, where I have the Team Members in Name column and Team on individual rows, like this:
Person A = Team A
Person B = Team B
...
I have the following formula on the Team DefaultSelectedItems, but it's not working as it can't compare table and text:
LookUp('Team Structure', DataCardValue6.SelectedItems.Email = Name.Email).Team
Is there any way how to automatically get multiple choices in the Team combobox based on multiple users selected in the Project Team Members ?

I have reproduced this issue on my side.
If this is a data card within the form, I would suggest you modify the Update property of the Team data card as below:
DataCardValue_Team.SelectedItems
Note that you should make sure that you have set the Items property of the DataCardValue_Team as below:
Choices(Project Team'.Team)

I have made a test for you, please take a try as below.
In my scenario, 'Project Team Members' is a SharePoint Person or Group field allowing multi select. Name column in 'Team Structure' is a Person column as well, Team column in 'Team Structure' is a Text column.
1). I set the DataCardValue6 Items property as below:
Chices('Project Team'.'Project Team Members')
2). Set the Combo Box DefaultSelectedItems corresponding to Team as below:
ForAll(DataCardValue6.SelectedItems,LookUp('Team Structure',Name.Email=Email)).Team

This is not throwing any errors now, but it's also not getting any results and the field is not updated automatically.

Have you ever checked your column type in your scenario?
I doubt that you don't have the exactly same column with mine and the details you provided could not help me figure it out.
Go to column settings and show me your column type of all the columns you mentioned in your post.

I have mentioned that you should show me your column settings. The Team column in the 'Project Team' should allow multi select.
I am a little bit confused that you should provide some screenshots like specific message for me to dig it out. I could not imagine how you configure the data source and how you write the formula in your scenario.
