I have :
- A set of SP lists connected to my app
- A set of DropDowns (let's call them InputsDD) related to some of the previously-mentionned lists
- A galery that is filtered depending on these dropdowns (the galery is composed of labels & dropdowns)
o I added TextInputs & a DropDown to the galery
o I have a button that forces (using Set()) values from the ThisItem of the galery, but also from the values of InputsDD, into multiple Variables.
- A form in New mode related to a SP list
o The Defaults/DefaultSelected of each DataCard are Variables
I found multiple topics that are related:
When I SubmitForm(), some of the DataCards are not sent to the SP list. They are all LookUps (only 1 is correctly sent to the SP list, the one from the gallery ThisItem).

But I could not make them work ! I understand that I should play on the Update() of the DataCard ? But how ?

'came back to this issue and found out the solution.
I had to modify the DefaultSelectedItems.
Simply:
My form was submitting forms to Database1, but part of data would not be submitted.
The idea of submission is as follows : I set a value through a control, then the OnSelect of a button set the value as a variable which is used as a Default value by a form which will later on be submitted.
Database1 is full of lookups to other databases
Initially I set the DefaultSelectedItems as related to the "mother" database of the information itself
LookUp(Choices(Database2.Characteristic);Value=Variable)
So here, Database2 is where the lookup of Database1 is looking for this specific information
But I was wrong, the solution was:
LookUp(Choices(Database1.Characteristic);Value=DefaultStandardName)
Which I do not find intuitive as the information is not hosted by Database1, but only refered to.
But this solves it.

You are correct in that you have to "play with the Update property of the card".
What you put there depends on two things - the data structure of the target field and the Items of the control. I will give you one example - if the SharePoint field is a Choice field and your Dropdown Items was based on the field Widgets, the Update of the card would be
{Value:YourDDName.Selected.Widgets}
If you provide the specifics, we can work out what they need to be.

Could you please share some code and snapshots about your scenario to help us understand easily?
If the LookUp data cards are all generated by systems, and only the Default property is modified, nothing else, so the issue is probably due to Default property.
If you want to set the Default value of combobox, please configure the DefaultSelectedItems property as follow:
LookUp(Choices('SP list'.LookUpColumn), Value='VariableName')

I'll focus on one example that I hope will be clear.
In my form I have DataCard1, composed of a dropdown DataCardValue2 and the usual labels. It is meant to show an information called a "standard name".
DataCard1's Update is: {Value: DataCardValue2.Selected.Value}
DataCardValue2's DefaultSelectedItems is: {Value:DefaultStandardName}
DefaultStandardName is created by a button part of my gallery. Part of its OnSelect is :
Set(DefaultStandardName;StdEq_StandardDenomination_1.Text)
StdEq_StandardDenomination_1 is the label of a characteristic of the items displayed in my gallery.
And the SP column I try to push DataCardValue2's value to is a lookup to another SP list (the one displayed in the gallery).
As you can see, your proposition is the one already implemented
Your proposition is accepted and does not prevent the app to operate, but the data is still not submitted to the SharePoint list
