update a row using patch

Good Afternoon 

I have an application that is built across multiple screens and multiple forms 

For example, the user fills in an opening form clicks save then in the middle of the year the user then is prompted to complete the interim part of the application and when they open it the user is prompted to complete the interim part of the form but is still able to view 

the opening part of the form they complete that part and then at the end of the year they are prompted to complete the end of the year component of the form. When they open the form they can view opening, interim items and they then complete the closing part of the form and save it. throughout the process, they are able to view all updated items.

The problem i am facing is that I am using a patch function to complete this but every time an item is saved it creates a new record 

how do i update the the same row without creating a new record 

The update items are rich text boxes so if I am unsure on how to patch these because i am not sure of the values the user will inout

If you are using a form, you don't need to use Patch() as SubmitForm() will save the data.  You set the mode of the form, depending on whether you are entering new data, ie NewForm(Form1) or EditForm(Form1) to edit a record.  The NewForm function is usually executed outside a gallery and the EditForm function is usually executed from a record selected inside the gallery.  ie. an icon in the gallery item selected with its OnSelect property:
EditForm(Form1); Navigate(EditScreen).  On the form properties, the Item property should relate to the gallery where the item is selected.  I like to use: Lookup(datasource, ID = Gallery1.Selected.ID) although in most situations, Gallery1.Selected will suffice.   The data source in the Lookup() must match exactly the data source property of the form. 

FYI, Patch() has three elements, the datasource, the record being patched, and the values in that record being patched enclosed in curly braces.  If you are using Defaults(data source) as the second element, then Patch will create a new record.  Alternatively, if you use Lookup(datasource, ID = GalleryX.Selected.ID) as the second element, then it will patch the record selected in a gallery.

Hi there so my forms are done in this manner

Final Form Two 

Final Form Three 

Now what i capture in the opening stage must show on the interim forms but there is new items to capture on the interim forms so i am not sure how i add the interim data to the opening form row in SP hence the patch

I tried your solution doing a submit form for the Interim forms but it created a bunch of new records instead
