I have been stuck here for about a week now. I have tried changing to my personal email, work email and even created an outlook.com email, it could not still get a connection for me to move on.
What am I not doing right?

Thanks for sharing those screenshots. Now I understand the issue: this happens when using Copilot to create a flow.
I have been trying to tweak the prompt so that instead of using the Office 365 Outlook connector, it will suggest to use the Outlook.com connector, but was unfortunately not able to achieve this. This means that the exercise can't be completed as-is in the developer environment due to the existing restrictions.
The alternative is to use the Start from blank option:
In the next step select When a row is added, modified or deleted and click Create:
Then fill out the parameters for the trigger by selecting is and filling out the below values (as shown in the video at 3:15):
Next, underneath the trigger, click on the plus icon to an action. In the Add an action pane search for Send an email (V2) and then scroll down a bit until you see the Outlook.com connector. Under there select the relevant action:
Finally, select the action and fill out all parameters (similar to what is shown in the video from 4:00, although the email subject and body will not be pre-populated):

Minute 10.45, narrator says he says "I'm inside make.powerapp.com" when the screen show clearly that is in make.powerautomate.com.
It's an error from the narrator?

Indeed there's a mismatch between what is shown in the video and what is possible in your developer environment. Because of this, you can't used the Office365 Outlook connector. Since Copilot only "knows" to use that connector for sending emails, Copilot is of no use in this scenario and you have to manually build the flow using the above guide.
Ps. make.powerautomate.com is the URL for the Power Automate maker portal, which is generic. Based on the permissions the account has that you use to log on to that portal, and the environment you select, some options may not be available (as is the case here).

The Loans table is not showing because you are using the default environment instead of you developer environment:
I could not find Loans table during the addition of parameters mentioned in the 3rd step according to your method.
