However, my flow won't stop triggering itself and I can't figure out why. Could someone take a look and diagnose?

I would need to look at this more in detail but on the surface, the root cause is your trigger is doing exactly what you are asking it to do, "when an item is created"... run this flow. So in your flow you are creating an item and that triggers the again by design.
Here's a potential quick fix (albeit, maybe there are better options):
Add a column FC "flow created" and assign the value of 1 when you create the items in your flow.
Next in your trigger settings, add a trigger condition that says, if FC not equal to 1
not(equals(triggerBody()?['FC'], 1))
Then the flow will fire, else do nothing. That should stop the flow from running constantly because now when you create your item (above step set variable), you are adding the FC = 1.

@trice602 Hey, thanks for replying. I tried this out last night and you were spot on with why it kept repeating. However, I made the FC column and tried setting this trigger condition, but for some reason, it is still repeating and triggering itself. I created a test item with FC = 1 and it still triggered itself when it shouldn't have run at all. For reference, I've attached some photos of the updated flow. Thanks again
