I'm trying to add a check-in button as directed in video 6, but when trying to update the formula, I'm getting stuck because "ThisItem" is not populating.
I can only get to Patch(Loans,
Any suggestions?

Have you made sure the button, for which you are trying to set the OnSelect property, is inside the gallery?
In the below screenshot you can see under the Tree view that the button is inside the gallery because of the indentation:
Only when the button is inside the gallery, ThisItem will be recognised as a valid identifier.

I am having issues right on this same point and can't seem to know to proceed.
I placed the Button in place but, ThisItem is missing.

As I can see in the tree view, the button is not inside the gallery, but on the same level:
On the canvas it looks as if the button is inside the gallery, but the better term would be on top of the gallery.
What you need to do to add a button inside the gallery is to select the gallery in the tree view and then add the button so the result looks like this:
When you have re-created this, you will be able to use ThisItem.

When selecting the gallery, you need to first click the Edit icon before inserting the button for it to be added to the gallery:
