It seems that it should be working, I have set a flow to get the Data from the (Json) attachment and transfer the data to a Sharepoint list, however I keep getting the following error:

It seems as there is no file attachment to be found, however there is (looking for the Attachment ID in the test flow it finds data).

ok, take a look at this flow, somewhat more simple than your one. It might give you some ideas. This works on the basis of only one attachment so selects the first attachment instead of going into a loop.
I put this into my source JSON file:

I have some information about your Flow need to confirm:
1. What's the attachment file type? Is it a text file or json file?
2. Two of them all contain JSON data?
You could try to add a Get attachment action to get the content bytes, then check the output if json format.

Thanks for your come back. You could use the base64ToString() function convert the attachment content bytes, then use JSON() function convert the string to JSON, then create item, for example:

Normally only one attachment will be sent at all times. I have noticed that the Flow also captures an image inside an email as an attachment but when the flow will be used, it will be a blank email (tested with completely blank emails with only a Test.JSON file).

I have tried to put this solution in place, and a running into a problem with the Get Attachment (V2) step. When I add Message Id to to the Message Id field, it suddenly creates and Apply to each step and places Get Attachment (V2) within it, and this seem to not allow the flow to succeed.

In the get attachment(v2) action you need to put the output of the action getAttachmentID, not the messageID from the trigger.
