Filter form or gallery by column values (eg only show columns with a specific value)

We are using SharePoint List to record a person we support (Sorry to add we are a Learning disabilities charity) risks and then rate them.

We have done this by creating a set of  columns for each of the risks with a choice of High, Medium,Low or N/a for each and then have the first column as their name. Eg below

Title	Risk1	Risk2	Risk3
Joe Bloggs	High	Low	Medium

We are trying to display in PowerApps the list either in order by the highest risk to lowest risk or by using some sort of visible filter to hide the low or N/a risks.

Any ideas, we have tried sort by columns but this only works for the item and will be the item appear at a different point in a gallery based on the column. 

The end result we are trying to achieve is the big list of issues being sorted highest to lowest for the one item in the list.

Do you want to filter out all the risks for each record in the list as high and medium risks, and arrange the names of the risks in order?

Could you tell me are these fileds(Risk1,Risk2,Risk3) allow multiple selections?
I assume these fields do not allow multiple selections.

My method is to traverse the entire table and traverse each field as required:

Could you show me some screenshots of your code area? PowerApps usually mark the wrong area.

In addtion, are they of the choise type (condition 1/2/3/4)?

The problem should be that you used a non-compliant field name(N/ARisk).

I suggest you use NoRisk or 'N/ARisk' instead of it.
