Manipulating table breaks cell formating and thus, the app

I posted it in the distant past and got not response, then I though I had the problem under control, but I was wrong.

My app:

It saves an audit in a databank. What is relevant for us now are two values:

Duration of the audit (it should be a float - I am patching it as "{Duration: Audit_Timer.Value}")

Date and time: Being patched as {Date_time: Now()}

In the Excel (OneDrive) to where the data flows to, I tried different things to ensure the app that the variables should be a float and a date-time value. And wrote as column names "Duration[number]" for the first and "Date_time[DateTime]" for the second. I also formatted via Excel the corresponding columns to display "Number" and "dd/mm/yyyy hh:ss".

I don't know exactly when it happens, but I have the guess it is if I DELETE an entry from my table using the app: everything breaks. In the next second, the columns are formatted as "standard" and the app starts to retrieve for example a string for the duration and weird date formats. I am deleting this info doing like so in Power Apps:

Remove(Table_Submitted_Audits, Filter(Table_Submitted_Audits, Audit_ID=Gallery_Submitted_Audits.Selected.Audit_ID), All);

And I am READING the Information from the table doing like so:

For the duration: Value(Gallery_Submitted_Audits.Selected.Duration)/1000

For the date: Text( ThisItem.Date_time, "[$-de-DE]dd.mm.yyyy hh:mm")

Something here I am implementing in a very inconsistent way and I still don't know what. Could anybody help me please?
