I have a sharepoint list with about 50 columns, all being either date, text or choice fields. In my gallery I can see only about 10 of the columns. Is there any reason why I wont be able to get the other columns?

I think i solved the issue. I was using 1 gallery to display items from multiple different sharepoint lists, and thus the gallery only made available the columns which were communal between the lists. I added more galleries so I use a separate 1 per sharepoint list. Now I don't have the issue any longer.
When you edit the fields for the Gallery does the column you want show in the list?
No, for some reason it doesn't show.
If I click on the gallery I see the following:
THen if I click on fields, it opens up my labels etc that I have added:
Now if I click on the Label1:
I see some column but not nearly all of them.

Galleries aren't designed to be bound to multiple lists at a time. So your logic is correct.
I have the same problem but I'm only using one source file (excel).
The data in the file is marked as a table.
When I import/connect to the file, I don't see all the columns (which are in fact headers in the excel file) under fields. There's like 10 out of 15 selectable.
When I import another excel file with a table in it, the vertical gallery also doesn't show all columns under fields (again headers in the excel file) . Then there's 8 out of 15 selectable.
Thoughts?

The challenge is open to all Power Platform (Power Apps, Power Automate, Copilot Studio & Power Pages) community members. We invite you to participate in a quest to provide solutions in the Forums to as many questions as you can. Answers can be provided in all the communities. Entry Period: This Challenge will consist of four weekly Entry Periods as follows (each an “Entry Period”) - 12:00 a.m. PT on June 17, 2024 – 11:59 p.m. PT on June 23, 2024 - 12:00 a.m. PT on June 24, 2024 – 11:59 p.m. PT on June 30, 2024 - 12:00 a.m. PT on July 1, 2024 – 11:59 p.m. PT on July 7, 2024 - 12:00 a.m. PT on July 8, 2024 – 11:59 p.m. PT on July 14, 2024 Entries will be eligible for the Entry Period in which they are received and will not carryover to subsequent weekly entry periods.
