Hi I have a SharePoint Online list and I want to know if there is a way to customize the edit form using Power Apps to add a button or some buttons that will: #1 Save the data just entered by the user #2 move the user to the next item's edit form to continue updating the list quickly?

Based on your description, I think you should use two buttons to achieve your purpose. One button for directly saving current record then go to the home screen, the other button for saving current record and then go to the edit screen of next record.
I did a test on my side for your reference:
1. Add two buttons in edit form. One called “DirectlySave”, the other called “NextRecord”.
2. Set OnSelect property of DirectlySave button to:
SubmitForm(EditForm1);Navigate(BrowseScreen1);Set(var1,false)
3. Set OnSelect property of NextRecord button to:
SubmitForm(EditForm1);Navigate(EditScreen1);Set(var1,true);Set(var2,var2+1)
4. Set Items property of Edit form to(list7 is my list name):
If(var1,LookUp(SortByColumns(list7,"ID"),ID >= BrowseGallery1.Selected.ID+var2),BrowseGallery1.Selected)
Also leave OnSuccess, OnReset and OnFailure property of edit form to blank:
5. Go back to your Browser screen, in your gallery, set OnSelect property of arrow button to below. Because when you first open an app, you will see this gallery screen, you need to use this arrow button to view the detailed information about a record(and then you can edit the selected record by clicking pencil button on the detailed screen).
Select(Parent);Set(var1,false);Set(var2,0)
Of course, you can also put above “Set(var1,false);Set(var2,0)” formula into below pencil button:
This time, you can check the result.

Thank you for your replay, unfortunately I got stuck at step 5. "go back to your Browser screen" . I am not seeing this anywhere in my list of screens. Not sure if this makes a difference but I am working with a SharePoint Online list for desktop use.

This will be a bit tricky if you want to achieve this purpose in the SharePointForm. My previous steps are inside a canvas app.
The default single SharePointForm cannot achieve your purpose, because each time you submit your record, the page will refresh and all variable will lose. So if you still want to achieve this function in the SharePoint Form, you need to add some more controls. Check my steps below:
1. Add a new screen called Screen1, add a gallery called Gallery1 in this screen. Connect this gallery to your list.
2. Add another screen called Screen2, add an EditForm called Form1 in this screen. Also connect this form to your list.
3. In the FormScreen1, set its Items to below(this is the default formula):
If(IsBlank(SharePointIntegration.Selected) || IsEmpty(SharePointIntegration.Selected),First([@list7]),SharePointIntegration.Selected)
Then add two button, set as below(when click DirectSave, your new added record will be saved into SP list directly; when click AllRecords, the Gallery1 with all SP list records will shown in Screen1😞
OnSelect property of DirectSave:
SubmitForm(SharePointForm1)
OnSelect property of AllRecords:
Navigate(Screen1)
4. Go to Screen1, click the arrow button and set its OnSelect to:

Notes:
1. If you want to edit records one by one, you must click AllRecords button, then select any record to edit(only in this way, "one by one" function (NextRecord button) will work).
2. If you do not want to edit any more, you must click QuitEdit button to go back to the default EditForm. Then next time, other users will still use the default form to add new records when clicking New button in SharePoint. Otherwise, if you close the edit window directly and see detailed information of another record, you will see wrong information. For example, you last edit the third record, and you directly close the edit window. Then you want to see detailed information of the first record, it will show you information of the third record.

Thank you for all your hard work trying to help me achieve this task. I spent some time working through these steps however it gives me an error message when try to add the OnSelect formula to the NextRecord button and wont let me publish the form. Also the Gallery shows ALL of the items and that is not quite what I was looking for, I want to be able to edit one item then move directly to the edit screen of the next item in my current view (items that need attention/ incomplete for example). You mentioned that this is a very tricky thing to accomplish with a customized SharePoint form, would you suggest I scrap this and try to build a Canvas app? Can I use a Canvas app to edit SharePoint list items?

Actually, these integrated forms are not designed to do what you are doing, particularly the actions of editing record one by one. I have seen many posts of them not delivering what is expected. I suggest you consider a standalone canvas app - it will work much better.
And of course, we can use Canvas App to edit SP list item. For example, SubmitForm function works for both creating new item and editing existing item.
When using a Canvas App, you can refer to the solution provided in my first reply to achieve your purpose(you can edit record one by one directly in the app).
