The gallery field choices in my app are very limited compared to what's actually in my SharePoint list. I've refreshed the data and started over with the connection several times, but no matter which of the 3 yellow highlighted fields below I try, it doesn't give the option to add the column I want. (That column is called Location.) Why would not all columns in a list be available for use in the gallery?
Maybe I should mention that the Location column is a Choice column with about 50 choices on it.

@v-jefferni , thank you. Fortunately, I just found the solution a few minutes ago and it (once again) seems that Power Apps is just BUGGY. No matter what I did with your and other suggestions, the Location field wouldn't be made available to use, or the formula in the Items property wouldn't force Location to display. Just by accident, out of frustration, I kept inserting new text labels repeatedly in the gallery control, and shortly the Location field populated. The Items formula is just what everyone says it should have been. Didn't work before, but now it does. Go figure!

Have you tried coding it directly into the text label in the gallery, rather than using the side menu?
1. Place a text label, make sure you have the gallery selected first OR select the label you want this on.
2. Insert the code below into the text property of the text label.
ThisItem.'Location'.Value
Please let me know if this doesn't work, so I can assist further! 🙂
@CodyO yes, thanks. I tried ThisItem.'Location'.Value and ThisItem.'Location'.Selected.Value, plus ThisItem.'Location'.Text and no luck.
And the error message says the Body, Title and Subtitle2 are expecting text values. Here's the error from the Body field.
Text(ThisItem.ColumnName.Value)
You could try this. This will just take your choices and make them into a text data type. I was testing something earlier today with 60 choices in a choice field and was also having trouble, I am going to test a few things and I will let you know what I find out shortly!
@CodyO - alas, it doesn't work. Thanks for trying! I'm also noticing column names being offered for use in the gallery layout that actually don't exist in my datasource. (I think the list was repurposed a long time ago and may be pulling old column names that have been changed over time. You'd think disconnecting and refreshing the $%^$ out of the connection would help, but no.)
@OneWinPlease - I have fought with data source refreshes since beginning to use PowerApps! You might have hidden columns in your SP list, that could explain the ghost columns that are showing up in there. The gallery itself looks like it's set to the right list, correct? I am slowly getting stumped on this! Oh, have you tried fully deleting the gallery, and starting again?
It may just be me, but I've noticed that at times I will need to delete my gallery, and refresh the webpage and make the gallery again, then it suddenly works! The good ol' "Turn it off and back on" trick.
Other than that, do you know if the choices column was a new column? Or did it replace the 'title' column?
@CodyO , Oh yes, I have even just recreated the gallery with an identical list (what my working list was copied from a while back). Same problem. So I guess I am stuck for now. Thank you though.

It seems the Choices column in SP list allows multiple selections, this made the Column.Value appear to be a table. In this circumstance, please set below formula in the Text property of the Label in the Gallery:
Concat(ThisItem.Location, Value, ", ")
You can also place a Combo box into the Gallery template, set Items to
Choices(ListName.Location)
and DefaultSelectedItems
ThisItem.Location
