On Powerapps i've a problem

I would like to find the formula on powerapps that will allow me to count the number of columns of today’s date, yesterday’s month and year.

Could you please provide a little bit more details as I'm not sure what you would like to achieve? 
Would you like to get the count of all items from a specific column with Today as date?
All items with value/date of yesterday?

If I'm on good track could you please let me know how big is your list? And potentially how much items with today/yesterday date you can get in one approach.

I created a sales powerapps app for my salespeople. In parallel I created a sales dashboard powerapss app which allows me to know who sold what. But I can’t keep track of the number of sales over a day, a month and a year.

I would like with a formula to count the number of sales made on a day thanks to the date.

Thanks for clarification.
Think Power Apps is not ideal for such scenarios and aggregation of data. Much easier for you would be to create dashboard in Power Bi.
For the values from today you can use first get the proper set of data:

Filter(UserAudit,Created>Today())

Today defaults to 12:00:00AM thanks to that this is working.
For yesterday without today:

Filter(UserAudit,Created<Today()&&Created>DateAdd(Today(),-1))

Yesterday is calcualted as DateAdd(Today(),-1) 
For the current month calculation will be easy
As for the comparison you can still use Today and to get first day of month you need use:

Date(Year(Today()),Month(Today()),1) 

For the previous/last month, to get first day :

Date(Year(Today()),Month(Today())-1,1) 

And the last day of previous month will be:

Date(Year(Today()),Month(Today()),0) 

And so on 🙂

Of course the calculation can be done much nicer with WITH function.

But this is only one part of puzzle as when you will add CountRows around the filtered data you will get the delegation warning.
If ALWAYS your Filtered results are below 500 (defualt setting for non-delegetion queries) then you dont need to worry.
If the results are over 500 but up to 2000 you can increase the row non-delegation queries limit (max 2000).
But if your list have more than 2000 your filtered results countrows will show incorrect values...

Please be aware that such operations are heavy for Power Apps and the App over the time will get slower and slower (the more data you have...)

Yet, still I would suggest to try play with Power Bi it is super easy and provide great results quickly and might be the perfect answer for your future trouble and requests. 
Alternatively dont be afraid to use SharePoint views there is a lot of nice things build in already and you can utilize most of them in couple clicks.
Next option is to create dedicated list very such data are kept and you are only reading the information.
Last but not least is to use Power Automate to query such data - with REST API such operation will be quick (dont use get items as it will take more time).
