Assign Task to other user using Canvas App.

I am using the Standard "Task" table to create task and display. The app security is such that user can only access their own records. Now the functionality that we need is to be able to assign the Task to some other user and I was trying to change the "Owner" of the task to assign it to other user. But when a user who does not have "System Administrator" security role tries to change owner they are getting this error. 
"The user does not have read access to the record"

@EricRegnier and @ChrisPiasecki are 100% on the right path here on the security side.   I am just adding to hopefully add some additional thing to review but they have hit most everything...

You are in a Canvas App so I would suggest to make sure you Clear on your Collection (or ClearCollect) before returning to the list view because it might still be in your list and you want it removed so you don't get the error.  You could also remove the item from the collection on the re-assign manually as well with the Remove() function.

You are correct but I am setting the owner while creating the record. So, it does not exist in any collection.

If you are setting the owner on creation of the record then you should be focused on the "Create" permission vs. Assign permission as this is what would be utilized when creating the record.  I think you still have this set to Organization level so it should be fine. 

I think the issue is not security focused but that your Canvas app is trying to read the record after you create it and you are creating it under a different owner with no ability to read the record.
